Method
- Bring a large pot of salted water to a boil. Cook pasta according to package directions for al dente. Before draining, reserve about 1 cup of pasta water.
- While the pasta cooks, heat 1 tablespoon of olive oil in a large skillet over low heat. Gently fry minced garlic (and a pinch of red pepper flakes, if desired) for 2-3 minutes, or until fragrant. Be careful not to burn the garlic.
- Stir in cream cheese and about 1/2 cup of reserved pasta water to the skillet. Cook and stir until the cream cheese melts and a smooth sauce forms. Stir in grated Parmesan cheese.
- Drain the pasta and add it to the skillet with the creamy sauce. Toss to coat evenly. Add more pasta water as needed to reach your desired consistency.
- Drizzle with extra virgin olive oil, top with additional Parmesan cheese and black pepper (if not using red pepper flakes), and serve immediately.
