Stuffed Sweet Potato

Ingredients

Potato

  • 6 Sweet Potatoes
  • Olive Oil
  • Salt
  • Aluminium foil
  • Butter

 

Dressing

  • 350g of cream cheese
  • 100 grams of olive oil
  • 100 grams of lemon juice
  • 1/2 bunch of parsley
  • 50 grams English mustard
  • 1 teaspoon of smoked paprika
  • 1 teaspoon of cumin powder

 

Coriander peanuts

  • 500 grams of salted peanuts
  • 30 grams of coriander seeds
  • 70 grams of caster sugar

 

To finish

  • 1/2 a bunch of mint
  • 1/2 bunch of coriander
  • 100 grams smoked maple syrup or honey
Method

Potato

  1. Wash the sweet potatoes and dry with a towel, place them all in a big bowl, drizzle with olive oil and salt generously.
  2. Place the sweet potatoes in a baking tray, add some butter on top and cover with aluminium foil.
  3. Bake at 180°C for 30 minutes appoximately or until soft in the middle.

 

Cream Cheese dressing

  1. Blitz all ingrdients together (if dressing is too thick, add some water or milk)

 

Coriander Peanuts (optional topping)

  1. Warm up the peanuts and coriander seeds in the oven 180°C
  2. Melt the sugar until lighter caramel colour, add the nuts and seeds mixing well until all the nuts are coated with sugar
  3. When the nuts are ready transfer to a cold tray.

 

Top with coriander peanuts to eleveate the dish. For an alternative meal, add your favourite protein to create a dinner classic.
