Method
Cheesecake
- In a machine with a whisk attachment place the cream cheese and sugar, whisk until soft, and add the eggs, one at a atime, vanilla paste and corn flour last.
- Place in a half gastro lined with baking paper, cook bain marie 150°C for 30-35 minutes, or until it is hard in centre
- Cool down for 20 minutes and blitz with cream to obtain smooth consistency
Strawberry Compote
- Wash and cut the strawberries in quarters, add the sugar, vanilla and orange zest, place in the fridge for at least one hour before serving.
Caramalised Almonds
- Melt the sugar until light caramel colour, add the nuts mixing well until all the nuts are coated with sugar, add the warm milk and mix until the cream evaporates.
- When the nuts are ready transfer to a cold tray.
Top with caramalised almonds for an extra crunch and touch of sweetness.
