Strawberry Compote Baked Cheesecake

Ingredients

Cheesecake

  • 8 eggs
  • 1kg cream cheese
  • 60 grams of cornflour
  • 350 grams of caster sugar
  • 700 grams of cream
  • 1 teaspoon of vanilla paste

 

Strawberry Compote

  • 3 punnets of strawberries
  • 50 g caster sugar
  • 1 teaspoon vanilla paste
  • 2 orange zest

 

Caramelised Almonds (optional)

  • 500 grams blances almonds
  • 40 grams warm cream
  • 100 grams caster sugar
Method

Cheesecake

  1. In a machine with a whisk attachment place the cream cheese and sugar, whisk until soft, and add the eggs, one at a atime, vanilla paste and corn flour last.
  2. Place in a half gastro lined with baking paper, cook bain marie 150°C for 30-35 minutes, or until it is hard in centre
  3. Cool down for 20 minutes and blitz with cream to obtain smooth consistency

 

Strawberry Compote

  1. Wash and cut the strawberries in quarters, add the sugar, vanilla and orange zest, place in the fridge for at least one hour before serving.

 

Caramalised Almonds

  1. Melt the sugar until light caramel colour, add the nuts mixing well until all the nuts are coated with sugar, add the warm milk and mix until the cream evaporates.
  2. When the nuts are ready transfer to a cold tray.

 

Top with caramalised almonds for an extra crunch and touch of sweetness.
