Method
Potato
- Wash the sweet potatoes and dry with a towel, place them all in a big bowl, drizzle with olive oil and salt generously.
- Place the sweet potatoes in a baking tray, add some butter on top and cover with aluminium foil.
- Bake at 180°C for 30 minutes appoximately or until soft in the middle.
Cream Cheese dressing
- Blitz all ingrdients together (if dressing is too thick, add some water or milk)
Coriander Peanuts (optional topping)
- Warm up the peanuts and coriander seeds in the oven 180°C
- Melt the sugar until lighter caramel colour, add the nuts and seeds mixing well until all the nuts are coated with sugar
- When the nuts are ready transfer to a cold tray.
Top with coriander peanuts to eleveate the dish. For an alternative meal, add your favourite protein to create a dinner classic.
